Sicily is renowned for its bountiful and delicious almonds. Though famous for their almond sweets, Sicilians use them to make conza as well, a mixture of bread crumbs, almonds, and parsley that is fried in olive oil and used as topping for grilled prawns and sardines or for pasta and vegetable dishes. Use any kind of leftover bread, but preferably whole-wheat or multigrain. One- or two-day-old bread is good, but even older is better, giving extra texture and crunch to the conza
