This is one of my staple spreads—very simple to make, but with a beguiling flavor. The combination of sweet and spicy fried peppers, complemented by sour-salty feta and crunchy pistachios, will have your guests enthralled and asking for the recipe. The spread keeps for days in the refrigerator, and you can serve it in a bowl with raw vegetables to dip or spread it on toasted bread or pita. It can also be used as topping for friselle, drizzled with tomato juice and fruity olive oil.</
