This dish is inspired by muhammara, a Syrian pepper-and-walnut spread, flavored with the distinct taste of pomegranate molasses. Most recipes call for grilled peppers, but I find that sautéing the peppers in olive oil deepens their flavor, plus it is simpler and spares you the time of removing the skins. I choose to make it with roasted hazelnuts, but walnuts work just as well. My guests find this brick-colored spread irresistible, especially when I make it with my homegrown peppers
