Fresh green chickpea pods, each enclosing two green garbanzos, appear at Mediterranean markets in the spring. In Turkey and in the Middle East they are painstakingly shelled, peeled, steamed, and added to salads. They are often mixed with yogurt or a fetalike cheese and garlic and served as meze. They are also a delicious raw snack, much like fresh fava beans or snow peas.
