Semsa Denizsel, the celebrated Istanbul chef and owner of Kantin Lokanta, is a passionate baker. Her sourdough bread is one of the best I have tasted. Very cleverly, she supplements many of her seasonal vegetable and fish dishes with toasted bread slices. In this simple winter salad, the creamy roasted squash is paired with crunchy olive oil croutons and complemented with yogurt-tahini sauce, creating an irresistible combination.
