Crunchy, bitter volvoi are usually gathered from the wild and were in high demand in ancient Greece as an alleged aphrodisiac. If that is not reason enough, scientists today insist that the compounds that give some vegetables their bitter taste are the most beneficial for our health!

Method

Make the lentil soup as described above. Instead of home-pickled cabbage, add a few pickled or roasted volvoi. Greeks used to export them, but you are more likely to find Italian lampascioni, a traditional product of Puglia, the region at the heel of the Italian “boot” (see Sources).
