You never quite outgrow this Balkan comfort food. I make it often, following the recipe of my friend Stamatia, who comes from an ethnic Greek village in southern Albania. Our friends love it as much as her young grandsons, who ask her to make it for them every time they visit. What follows is the “poor-man’s” version, but the flavors are rich despite their humble origins.
