When you think of smoked salmon, the cold stuff that’s sliced paper thin and piled on top of a bagel is probably what first comes to mind. I am a big fan of cold smoked salmon (and the bagel, too, of course), but hot smoked salmon gives it some major competition. It’s often forgotten about and really shouldn’t be because it’s easily more of a crowd-pleaser.
