When zucchini noodles, a.k.a. zoodles, came along several years ago, you just couldn’t persuade me. I still feel this way, even after trying them once or twice, so to be clear: This is not a zoodle recipe. What it is, instead, is a pasta recipe with lots of grated zucchini, so the two ingredients live in harmony rather than the latter trying to pose as an imposter. Oh, plus, zucchini linguine is just fun to say.
