Maybe it’s a holdover from my years as a vegetarian, but my steak cravings are generally few and far between. When I am in the mood, however, this is how I want to eat it. Tagliata is a classic Tuscan preparation of sliced steak most often served over arugula, as it is here. The arugula is the perfect foil for the meat, its spicy freshness cutting through the meat’s richness. This is the ultimate make-ahead dinner because the steak can be marinated in the mixture of garlic, rosemary, lemon
