I’ve always kind of thought of chicken Milanese as sort of an upside-down salad: Crispy chicken piled high with simply dressed greens. Here, the greens are escarole, which have all the crunch romaine lettuce delivers but with a nutty, mildly bitter flavor that plays well with the breaded chicken, lemony vinaigrette, and salty shaved cheese.
