Eggs in Purgatory

If you’re familiar with shakshuka—the Middle Eastern dish of eggs poached in tomato sauce—this is the Italian version. The dishes are actually quite similar, especially in the fact that no two recipes are alike aside from all of them containing an aromatic sauce and eggs. My take is heavy on garlic and delivers just the right amount of fire—as the name suggests—even though the origins of the name are unclear.
