    We encountered squid adobo in the kitchen of Mama Auyan in Polangui, Albay. This is a simple, fresh, and flavorful dish that cooks quickly—a great way to prepare squid.

    Ingredients

    • 3 tablespoons olive oil
    • 5 garlic cloves, sliced
    • 1 medium onion, chopped

    Method

    1. In a large saucepan over medium heat, warm the oil. Add the garlic and onions and sauté until softened, about 5 minutes. Add the tomatoes and cook for 1 minute.
