    1. Place the vermicelli noodles in a large bowl and cover with hot water. Let soak for 30 minutes, then drain.
    2. Meanwhile, to make the chicken stock, place the chicken breast in a large pot and add 8 to 10 cups water (just enough to cover the chicken) and 2 teaspoons salt. Bring the liquid to a boil over high heat, then reduce the heat and simmer until the chicken
