Pineapple Sweet and Sour Sauce

    • ½ medium pineapple, peeled, cored, and minced
    • ½ medium onion, minced (about ⅓ cup)
    • 1 medium carrot, grated (about ½ cup)


    Combine all the ingredients except the cornstarch mixture in a medium saucepan. Bring to a simmer over medium heat and simmer until the pineapple has softened, about 5 minutes. Slowly stir in the cornstarch mixture. Simmer, stirring, until the sauce coats the back of a metal spoon, about 5 minutes. Cool to room temperature before serving.
