    I had always thought the term menudo to mean small diced things because the menudo I grew up with was a dish with pork, liver, and potatoes all uniformly diced. The name actually comes from a Mexican stew that uses tripe and white hominy. Romy reconstructed this dish from memory several years ago and he served it as a sauce to go with longaniza (pork sausage) on one of our Mother’s Day menus.
