The sans rival is the royalty of all desserts in the Philippines, extremely rich and delicious. It is also a specialty of the town of Sta. Rita, Pampanga, where, through the intercession of Mamang Guanzon, we were able to watch the bakers of Lansang Delicacies make that day’s batch of sans rival.
The cake is made up of layers of dacquoise, then iced with a buttercream frosting. This recipe, which we adapted from the Frog Commissary Cookbook, uses macadamias instead of cashews
