We adapted this recipe from the leche flan that Joe Lat, Mrs. Relova’s cook, prepared for us. The special surprise of the flan was the homemade macapuno that he spread over the bottom of the pan before the custard was poured in. When the flan was turned over on a platter, the caramelized macapuno would be on top of the flan. For this recipe, we decided that it would be easier to make the caramelized macapuno separately and serve it on the side.
