    The ube, or purple yam, is uniquely Filipino. It is technically a yam and not to be confused with taro or any purple potato or tuber. We use purple yam ice cream as a topping for our halo-halo.

    Ingredients

    Haleyang Ube or Purple Yam Jam

    • ½ cup heavy cream
    • ½ cup whole milk 1

    Method

    1. For the purple yam pastry cream, in a medium saucepan over medium heat, whisk together the cream, milk, coconut milk, and sugar. Bring to a simmer. Whisk in the purple yam flour, then the grated purple yam. Lower the heat and cook, stirring with a wooden spoon, until the mixture holds together and starts to pull away from the pan, 5 to 8 minutes. Set aside.
