  • 2 pounds (900 g) boiling potatoes, peeled
  • 1 small onion, peeled

Method

Finely grate the potatoes and then the onion, either in a food processor or by hand. Squeeze the vegetables dry in a strong kitchen towel and mix them in a bowl with the eggs, seasonings, and parsley. Heat the oil in a large skillet set over medium-high heat. Add the potato mixture to the pan by tablespoonfuls, flattening each into a neat oval shape with the back of a spoon or a metal spatula,
