This is a French-Canadian dessert traditional at holiday time. It is only slightly sweet, with the delicate flavor of maple syrup.
Prepare the pastry and chill it briefly. Roll out two-thirds of the dough into a 13 to 14-inch (35 cm) circle; it shouldn’t be too thin, about 3/16 inch (½ cm) thick. Fit the dough into the springform pan, tucking it gently against the sides and making a nice border. Set in the freezer for 15 minutes.
