Place the shaved onion on a perforated tray with a deep set baking tray beneath it. Mix together the salt and sugar and cover the onions with it. Leave to stand for 1 hour to remove excess liquid.
After an hour, squeeze the onions to remove any remaining liquid. Deep fry in oil until they are a deep golden brown and crispy. Drain excess oil on paper towels.
