Lay the potatoes on a baking tray sprinkled with coarse salt. Bake at 180°C for 45 minutes until the potatoes are soft.

Halve each potato and scoop the flesh from the skins, making sure that you scoop out as much of the flesh as possible. Reserve the potato flesh for another use.

Cut each half of the potato skin in half again, so that you have 8 pieces of potato skin in total.

Deep-fry the potato skins at 180°C for 5 minutes until they are golden and crunchy. Remove and drain excess oil on paper towels.
