  • 100 g brown sugar
  • 100 g salt
  • 50 g ground paprika
  • 2 g cayenne pepper
  • 1.5 g ground black pepper
  • 1.5 g garlic powder
  • 2 g ground cumin
  • 4 Up-To-Date potatoes – about 800 g


In a flat, wide bowl, mix together the first 7 ingredients to make the marble spice. Reserve until needed.

Wash the potatoes thoroughly and do not peel. Cut the potatoes into 1 cm batons to make chips. Blanch the potatoes in oil heated at 160°C for 5 minutes or until just soft without colouring. Absorb excess oil on paper towels and then reserve until needed – not in the fridge.

When ready to serve, increase the oil temperature to 180°C and fry the chips a second time until golden and crispy. Remove from the oil, drain excess oil on paper towels and toss in the reserved marble spice.

Use 80 g chips per serving.
