Ingredients

  • 1 thick stem of rhubarb
  • 1:1 stock sugar syrup (see p.327) – for brushing

Method

Shave the rhubarb thinly on a mandolin. Brush with stock sugar syrup. Place between Silpat mats. Dehydrate at 54°C for 48 hours.
