Method

Cut the lemons in half and boil until soft. Remove the pith and place the halved lemon shells under the heat lamp or alternatively in a dehydrator at 54°C for 22 hours. Place in a hot smoker at 70–80°C for 6 hours until black and dry, and then blend into a powder.
