  • 4 lemons – halved
  • 100 g boiled lemon skin
  • 75 ml water
  • 25 g honey
  • 3 g salt
  • 20 ml lemon juice
  • 3 g hot German mustard
  • 3 g white miso paste


Place the halved lemons in a pot of boiling water. Boil the lemons until the pith is no longer intact and only the lemon skins remain. Reserve 100 g skin to make the gel.

Transfer the lemon skins to a Thermomix jug. Add the remaining ingredients and blend until smooth.
