Ingredients

  • 160 g sugar
  • 100 g ginger – peeled and grated
  • 100 g garlic – grated
  • 60 g Korean chilli flakes
  • 60 ml fish sauce

Method

Combine the ingredients in a bowl and mix until they are well incorporated. Leave the mixture for a couple of days to settle and develop in flavour, and use 5–10 ml per serving.
