Ingredients

  • 750 ml rice wine vinegar
  • 15 g salt
  • 225 g castor sugar
  • 425 ml sushi vinegar
  • 60 g bonito flakes
  • 12 nori sheets
  • 45 ml mirin
  • 150 ml soya sauce

Method

Combine the above ingredients and reduce in a pot to form a syrup. Set aside.

Blend the remaining ingredients and add the reserved syrup. Blend until smooth and refrigerate.
