Wash the oranges and peel with a knife, reserving the peeled skins in a pot. Juice the 4 oranges and add the juice to the pot along with the peel.
Bring the liquid to the boil, cover with a cartouche (silicone or paper lid) and simmer on low heat until the peel is soft, making sure that there is always enough liquid in the pot. Blend the peel with whatever liquid remains, adding a touch of water if needed. Transfer to a piping bag, then refrigerate and reserve.
