  • 3 golden delicious apples
  • 125 ml apple juice

Method

Peel the apples and halve lengthways to remove the core and stem. Place the apples face down in a perforated smoking tray and hot smoke for 20 minutes. Remove the apples from the smoker and place in a pot with the apple juice.

Cook the apples over medium heat until they have softened completely (30–40 minutes). Transfer the contents of the pot to a Thermomix jug once cooked and blend on high speed for 5 minutes until a smooth purée forms. Remove the purée from the jug and reserve in the fridge.
