  • 500 g salt
  • 400 g brown sugar
  • 10 g black peppercorns
  • 5 g star anise
  • 5 g bay leaves
  • 5 litres water

Method

Heat the ingredients to dissolve the salt and sugar. Cool to room temperature and then refrigerate until needed.
