  • 100 ml water
  • 200 ml sherry vinegar
  • 200 ml soya sauce
  • 100 g brown sugar
  • 40 tops shimeji mushrooms


Place the first 4 ingredients in a pot and heat to dissolve the sugar. Pour the hot liquid over the shimeji mushrooms. Leave to soak for as long as you like.
