Ingredients

  • 350 ml rice wine vinegar
  • 75 ml water
  • 7 g black peppercorns
  • 7 g coriander seeds
  • 7 g fennel seeds
  • 1 bay leaf
  • 1 star anise
  • 75 g sugar
  • 30 g salt

Method

In a pot, combine all the ingredients. Heat until the sugar and salt dissolves. Allow to cool, then refrigerate until needed.
