Ingredients

  • 240 ml mirin
  • 250 ml saki
  • 115 ml soya sauce
  • 200 ml water
  • 135 g sugar
  • 25 g glucose
  • 50 g ginger – peeled and sliced
  • 200 g sweet potato – peeled and cut into large dice
  • 1 bunch leeks – cleaned and charred

Method

Combine all the ingredients in a pot and leave on a gentle simmer for 12 hours. Once the sauce begins to thicken, strain to remove ginger, potato and leeks. Return the pot to the stove to reduce until the mixture has a loose syrupy consistency.
