This dish celebrates the dark colours of the autumn and winter seasons. Rich in anthocyanins, which are natural pigments that make their colour, these are shown to benefit brain health and reduce inflammation. The deep roasted cabbage is contrasted with creamy garlic beans, red kale pesto and black quinoa.
