Berries are the ultimate brain food, rich in polyphenols and antioxidants. I’m forever finding a way to incorporate at least one serving into each day. This jam (jelly) is filled with berries and a dash of rosemary which adds flavour when poured on porridge, dolloped on top of overnight oats or smothered on pancakes.
Place the frozen fruit in a saucepan and pour over the sugar. Leave to sit and thaw for 10 minutes.
Add the herbs and place the saucepan over a medium heat. Simmer the fruit for 30 minutes until the liquid is mostly gone and you have a medium-thick jam-like consistency.
Remove the herb sprigs and discard. Leave to cool completely before spooning the jam into a sterilized jar wit
