This slaw really can flow with the seasons. I have used a nice balance of vegetables here but don’t be afraid to switch it up depending on what you have. It’s very simple and created to be added into your stir-fries, salads and can even be warmed through and served with grains, leaves and a dressing for a quick lunch.

Ingredients

  • 1 large carrot, washed and peeled
  • 1 red beetroot, washed and peeled
  • 1 candy cane beetroot, washed and peeled

Method

Grate each of the root vegetables, experimenting with using a box grater for a rustic slaw or a vegetable peeler to make a slaw with ribbons or even a chunky matchstick slaw, if you have good knife skills.

Toss the roots in the oil, citrus juice and salt and leave in the fridge until ready to serve.

This slaw will keep for up to 4 days in a sealed container in the fridge.
