Let’s just say right off the bat that this is not in any traditional way a tabbouleh—but since that’s the name we know, I’m hoping it gives everyone an entry point into the world of bulgur wheat in salads. The nutty textured grain adds heft and flavor to a dish that balances earthy walnuts with the sweetness of apples.
