This is the quick version of the comfort food classic. A good chicken stock is an essential base, but since we are trying to keep it as easy as possible, there is also ton of flavor added through the coconut milk, ginger, garlic, and fish sauce. Those powerhouse ingredients make up for any lack of length in cooking time. The secret here is to just buzz almost everything up in the blender—you don’t even need to peel your ginger.
