I adore the flavor that char adds, but you don’t need a grill to make it happen. This recipe calls for just your plain old gas stove. Don’t get scared of burning zucchini on a flame—trust the recipe, and you’ll find the easiest way to make a complex, smoky soup without having to turn on an entire outdoor appliance.
If you have a gas stove, then turn on two burners to medium high heat. Place the zucchini directly on top and cook for eight minutes, turning every two minutes or until charred on all sides. (If you do not have a gas stove, you can place the zucchini under the broiler in your oven, but be sure to turn every minute or so.)
