Mussels fulfill everything we want in a quick dinner—they cook fast, have a ton of flavor on their own, and are among the most inexpensive proteins around. So why do we only cook them for a special occasion? I think, once we get over our fear of the fanciness of mussels, we open up a whole new simple option. This recipe uses miso paste and garlic to amp up the flavor and pair it with the equally quick-cooking bok choy to make a whole meal in one pot, as simple as can be.
