We’ve all accepted a slice of bread as a conduit for a meal (hello, avocado toast), but why aren’t we utilizing rice cakes in the same way? They have a texture and sturdiness that bread doesn’t have—not to mention they make any gluten-avoiders happy. This recipe is eminently swappable. Use different seafood (if you can’t find tinned mussels, then clams or oysters or even fish also work great. And don’t worry if your mussels have flavors like paprika or are pickled—find the versions you like
