I know it’s against the cardinal rule of 15 minute meals to have three dishes to clean at the end, but hear me out: this is such a crowd-pleasing delight that you won’t mind the blender/pot/pan combo. Pistachio pesto with a lot of garlic gives a ton of flavor, and the thin meatiness of flounder is its perfect pair. Serve it with some pesto-ed up couscous, and you’ve got a dinner you could serve to guests or have as a healthy weeknight meal.
