Poaching fish is one of the easiest and most tender ways to cook it. And this recipe takes the very mild cod and gives it a barrage of flavor with ginger, soy, and basil. Add in quick-cooking snap peas, spinach, and tomatoes, and you’ve got a meal in minutes. This also goes great with a hunk of bread on the side to dip in the sauce and make the meal a bit heftier.
