This is a dish that is almost entirely from the pantry, and yet it couldn’t feel more vibrant—and it’s so easy that it’s really more about heating up than actual cooking. Sausages and artichokes are well known staple pantry heroes, but I wish pre-made polenta got more attention. It adds heft the way that pasta or rice might to a dish, but it is incredibly simple and gives a nutty corn element. And all together with that hit of sumac, you get a dish that will make everyone crave seconds.
