This one-pot meal is as satisfying as it is easy. Practically everything comes out of a can, yet it tastes as fresh and bright as possible because of the combination of salsa verde and feta. Do make sure to seek out a good salsa verde, though—this recipe is only as good as the ingredients you start with.
Place a large pan or Dutch oven on medium high heat. Drain the artichokes. Add the olive oil, spinach, artichokes, and dash of salt to the pan and cook down for one minute.
Add the salsa verde and garlic powder and bring up to a heavy simmer.
Lightly chop the cilantro, then stir it in. Create little wells for the eggs. Crack the eggs into the pan, add another dash of salt on top
