This is one of those dishes that somehow feels like pure fun and yet is surprisingly healthy. The eggs take the place of pizza dough (which, I know, will probably cause a few people to scoff at calling this pizza in any way, but just go with it). The tomato sauce, basil, and mozzarella combo goes perfectly. As with all pizzas, feel free to go wild with whatever toppings strike your fancy. It’s that perfect “breakfast for any meal” kind of dish that everyone will be a fan of.
