Asparagus and eggs make the simplest light breakfast or lunch meal. While we might not usually think to broil our eggs, I actually love the silky poached texture that makes a perfect contrast to the asparagus. And most importantly, it’s a one-pan, minimal-cleanup healthy option.
Place an oven rack four to six inches from your broiler (err on the closer side if your broiler isn’t that strong). Turn the broiler on. Line a sheet pan with aluminum foil.
Place the asparagus on the sheet tray and toss them in the oregano, olive oil, and salt, and the juice of the lemon. Make sure you’ve tossed enough that the foil is covered in oil as well.
