I constantly feel lucky to live in a golden age of ingredients and influences—none of which is more apparent than the simple perfection of putting classic Greek salad ingredients inside the crunch of a taco. It’s not traditional to anyone, but it sure is a delicious way to have an easy, no-cook meal.

Method

Put the kalamata olives and Greek yogurt in a large bowl. Then prep the rest of your ingredients—dice the cucumbers, pepper, and cherry tomatoes (these can be fairly large, don’t spend too much time). Chop up the mint.
